Today I’m going to blog about pretzels.

Hey, it’s the weekend. Who wouldn’t love some pretzels for the weekend?!

Last night I posted a picture of some soft pretzels I was making on Twitter. It generated a fair bit of response. I mean, really, who doesn’t love soft pretzels? Even people who do voiceovers love soft pretzels right?

Mostly I received one of two responses. A) I’ll be right over. B) How do you make them?

Here is the answer to B.

You will need:
1 pkg. active yeast (I buy yeast from the bulk store… 1 package is roughly 1 tablespoon)
1 1/2 c. warm water
1 tbsp. sugar
2 tsp. salt
4 c. flour
1 egg

To prepare them:
Dissolve the yeast in warm water. I let it get a little frothy. Next up, toss in the sugar and salt. Stir this really well.

Gradually add your flour and stir. By the time you get that third cup in it’s darn near impossible to stir. Don’t be afraid to use your hands. You’ll get dirty, no doubt, but sometimes sacrifices must be made for the greater good.

Once it’s mixed knead the dough on a floured board for a while. Most people say 8-10 minutes. I say… until it looks and feels about right.

After you’ve done that roll it out into a log shape and cut it into 12 pieces. Roll each of those out to about 12 inches. Shape them like a pretzel, placing them on a sheet covered in aluminum foil

Let the pretzels rise for at least an hour. This part is torture because they look good and you just want to hurry up and be able to eat them.

When it’s time to toss them in the oven first brush them with egg. One egg whipped with a fork. That’s it. Add your coarse salt… as much or as little as you like.

I bake mine in the oven at 425 for around 15 minutes or so. This is when they’re just starting to show a nice golden brown colour. Not too hard. Not too soft. If you like them a little harder, give them an extra 5 minutes.
